Anyone have a good recipe for the corn cake like you would get at Chi Chis? I've found some on the net, but they didn't come out anywhere near like the real thing.

Someone else read my mind, a good couple months before me.... and it looks like no one had the answer.... Please help me I neeeeeed these since chi chi's no longer is around!

Thanks,
Josh

If you can describe it for me maybe I can figure it out for you. I am unfamiliar with most chain restaurants so I have no idea what you're looking for. If you can tell me what you think the basic ingredients are, the texture when served, how it looks on the plate when served, and how you think it's cooked (baked, fried, whatever) I might be able to come up with a place to start and can refine from there.

Don Pablo's has a sweet corncake that borders on being a dessert. Very sweet, moist, with whole kernels in it. Looks to be baked. Comes in a bowl and needs to be eaten with a spoon. Does that sound similiar?

Not sure if this is the one you're talking about or not - I've never tasted the one to which you refer, but I did find these on the web that sound like they might be similar. I saw this particular recipe several times. At the bottom are three other links where I found it. Hope this is what you were looking for.
