Salmon Rub

1 TB dark brown sugar
1 tsp kosher salt
1 tsp garlic powder
1 tsp ground ginger
1 tsp ground coriander
1 tsp coarsely ground black pepper
1/4-1/2 tsp ground allspice
1 1/2 lb. center cut salmon fillet

Place salmon on work surface skin side down.
Spritz with cooking spray. Sprinkle evenly with spice mixture and press into flesh. Cover with plastic wrap and refrigerate for 15 min.

Place skin side down on grill coated with cooking spray. Grill for 10 min. or until it flakes easily.
(I grilled for 5 min. seasoned side down and 5 more after turning over.
Direct method using charcoal.
