Smoke a whole breakfast sausage to 165. Cool then slice thin and brown in frying pan.
Cook scrambled eggs (slowly thank you KK). Warm flour tortillas.
Assemble in tortilla: a layer of sausage slices, scrambled eggs and, cheese.

Other additions: onion, jalapenos, fresh basil....
 
Smoked my first fattie last night. My wife said that that was just sick. Guess who asked for another slice this morning for breakfast.
 
Bob, I usually am eating it the next day...so it is coming out of the frig. It must be heated and it still has plenty of fat. So not knowing any better, I sliced it and fried it. I also slice it thinner than I would if I were frying fresh sausage. Smoked sausage is gooooood.
