With coals left on my WSM Sunday after a LONG chipotle marathon, I did a beer-butt chicken (used a can of pineapple juice) and couple of lbs of country sausage with a plan to have my wife make gumbo. The gumbo is happening tomorrow, but I got hungry for the chicken/sausage today. I wanted something like a Chinese Chicken Soup, so I appropriated a little of the smoked chicken/sausage.
The soup turned out pretty tasty and very easy to make.
2 TBS butter
1 cup chopped onions
2 cloves crushed garlic
1 TBS chopped/crushed ginger
2 carrots cut into matchsticks
2 cans vegetable broth
5 cups water
4 TBS soy sauce
2 TBS mirin
4 TBS rice vinegar
fresh ground pepper
about 6 oz.chopped smoked chicken
about 2 oz. diced smoked sausage
2 packs of Raman noodles (not the flavor packets)
1/2 cup slivered green cabbage
1 cup chopped romaine lettuce
squirt of Sriracha Hot Chili Sauce
1 TBS sugar
Melt butter in large pot, add onion, garlic, ginger, and carrots. Cook about 5 minutes until soft. Add the vegetable broth and water, and all other ingredients except the lettuce. Cook 3 minutes until noodles are soft. Add lettuce. Let soup sit for about 5 minutes.
Just one of the hundreds of ways you can use WSM leftovers. Mmmmmmmm.
