First cook on SJS

Tonight I decided to try out my SJS. I was cooking some boneless thin pork chops. I planned on cooking the majority of them in my 22 1/2" OTS. I put one layer of coals on the SJS charcoal grate. I had taken off the ash catcher and just had it laying on the ground to try and get some more air flow to the bottom vent. I discovered that one layer of coals was not enough to cook the chops in a timely manner. I ended up putting them on the bigger OTS to finish them off. The SJS just didn't seem to put out much heat the way I had it configured. Next time I might have to use more coals and have more than one layer. I was a little disappointed in its performance.

i think they still have enough heat to cook just fine. even a weber 22.5 kettle will reduce the temp(coal die down a bit) when the lid is put on. but yea, i think a single layer is not enough.
