Even better beautiful buttermilk battered tangy chicken wings!

Following the line of great fried chicken, heres a recipe for chicken wings that will dictate your future journeys in culinary poultry!

(4lbs wings)

For the Batter: (this recipe is copied from "Steaks, Ribs, Roasts, and Chops")

batter:

dry

3 C flour
1 T kosher salt
1 T freshly cracked black pepper
1 t Garlic powder
1 t onion powder
1/2 t paprika
1/4 t cayenne


1 C Buttermilk
1 Egg
1/2 t Baking Soda
1 t Baking powder


Combine dry ingredients in large ziplock back.
Blend wet ingredients in a medium bowl and pour into second ziplock back.

Place wings from dry, to wet, to dry again....making sure you shake well during each step to develop a wonderfully crisp coat. Deep fry wings until deep golden brown.

Place in medium bowl and toss with the following....



2 C Sweet Baby Rays original bbq sauce
1/4 C white vinegar
1 t chipotle powder
1 T brown sugar

serve with

1C hidden valley ranch +
1/4 c sour cream
1 t freshly cracked black pepper!
