I have a dozen pork chops i would like to cook the minion method. how long and should i use a rub?
 
A pork chop is not a good candidate for low and slow, not enought fat in them to keep moist. I suggest that you grill it.
If thick enought make a pocket in the chop and fill with blue cheese. Rub with something low in sugar.

Good idea Jim...I will try that one next time. The Blue Cheese stuffing sounds devine.

Don't forget the Peach Chunks to add some *umph* to the flavor....
