A VWB noob looking for a little advice here...

Thanksgiving is at the in-laws (3 hour drive from here). We are leaving Wednesday evening and having lunch on Thursday. I am going to do an apple brine turkey to take with us--probably have it on the smoker Wednesday morning.

So my question is...what is the best way to prepare it for transportation, and what is the best way to reheat it for Thursday?
 
The best way? Cook the bird the day before, rest it for 20-30 min, remove any stuffing (if you've stuffed), carve the bird, leaving the legs whole, and put the breast slices in one pan, barely covered with stock, and the remainder of the bird in another. Cool, cover, chill.

Reheat in a 325 oven till just hot. Drain the stock from the breast pan. Arrange breast and dark meat on a platter; serve.
