Pork Loin Stuffing?

We used to make a whole stuffed pork loin but I cannot find the recipe anymore. The recipe involved chopping and sauteing onions, mushrooms and apples and used italian bread crumbs. The daughter has requested this for Christmas. Please help! Thanks
 
I can give you a good idea. Amounts depend on size of loin and whether you are making a roulade or simply butterflying, so you might have excess stuffing, but no big deal. Double for a whole loin.

Chop a couple medium onions into a dice. Chop a pound of mushrooms and 1 or 2 pelled apples. In a wide sauté pan over med-high heat, sauté all till the onions are soft and the mushrooms have released their juices. Increase to high, season with salt, pepper, some thyme and sage, and cook till about half the juices have reduced. Optional: add 1-2 minced or pressed cloves of garlic and cook till fragrant, about 45 secs. Remove to a large bowl and allow to cool.

Eyeball the volume of the mix and add about half its volume of breadcrumbs and, optionally, a good handful of chopped toasted pine nuts or pecans. Mix and adjust seasoning. For binding, if you wish, fold in 1 egg or 2 egg whites, beaten till combined.
