Au Jus for FRENCH DIP SANDWICH


 
This one is pretty basic.....

8 oz mushrooms
1/2 small diced onion
2 cloves garlic
t thyme
1/2 cup dry red wine
1 cup beef broth

Sautee mushrooms and onion in butter, add garlic when liquid is almost gone for about 30 seconds, when liquid has dried up deglaze with red wine, add beef broth and simmer for about 10 minutes. Done deal, scoop out the mushrooms for the sandwiches and dip away.

What Clark said except: I'd take just a bit of the RB diced and into the pan with just a touch of oil. Get that "crisped" up a bit, (pan should be almost dry with goodness) then add some butter and take on the mushrooms & onions, etc.
