Build your own smoker


 
I know this is slightly heretical, but I have been thinking of taking what's great about the WSM, and making a more permanent, built in, wind proof, auto temp controlled, firebrick lined, more capacity "super WSM".

Anyone else thought of this or done it? I have found some information about DIY smokers, but I'd prefer some feedback from the people of this forum.

I'm really considering this because I want to be able to hold back yard bbq's for a group of 20-40 people, and 1 WSM just won't cut that. If I'm already thinking of building an outdoor countertop for a gas grill, why not build a smoker for more capacity? Something that is even adjustable based upon capacity needed?

All help/ideas/criticism appreciated!

I built some Big Drum Smoker clones out of steel drums and have them outfitted with Performer/Master-Touch lids.

22.5" Kettles were sacrificed for this project, but if you can get a drum with a lid they work just as well. If you can find an 80 gal. Salvage drum you could use a 26.5" Weber grate. Two of my drums are 38" tall with 2 cooking grates, I've cooked a couple backyard parties for 30+ people with them.
