Crabmeat ABT’s

12 - Jalapenos
1 - Cup lump crabmeat
4 - Oz cream cheese (softened)
2 - Oz goat cheese (softened)
¼ - Cup scallions (chopped)
Juice of ½ lime
¼ - tsp chili powder
Salt to taste
½ - Cup crushed tortilla chips


Cut jalapenos lengthwise. Scrape out membrane and seeds.

Blend crab, both cheeses, scallions, lime juice, chili pepper and salt in bowl. Spoon out crab mixture and stuff each jalapeno half. Sprinkle crushed tortilla chips on top of each. If desired, dust each half with a little more chili powder for some color.

Grill indirect pepper side down until pepper starts to soften yet is still firm to pick up. Takes usually 15 – 20 minutes. Turn peppers front to back half way through to even heating.

I thought the melting cheese would run out of the pepper, but the whole mixture stays in place.
