Stuffing on the WSM

Is stuffing a side dish that can be cooked on the WSM? I'm thinking of placing a pan of stuffing below the turkey, and letting the drippings fall into the stuffing. Does this sound like a valid idea?
 
Sounds good to me. As long as your turkey is done to the right temp before you remove the pan, and the center of the dressing reads 160-165 deg. If not you can just pop it in the oven till you reach safe temps and enjoy

I did that and it worked for me.

Stuffing went in about 2 hours before the turkey was done. The downside I suppose is that you will get turkey fat along with drippings in the stuffing. Mine did not seem greasy at all though. I wonder if more fat renders off early in the smoke rather than later.
