With New Years fast approaching, here's a quick and easy recipe for wings. I feel that dredging the wings in flour first allows the sauce to cling more easily to the wings.

30 chicken wings, tips cut off and remaining wing cut off into two sections.

1 Cup all purpose flour
1 Tablespoon salt
1 Tablespoon fresh ground pepper
1 Tablespoon garlic powder
1 Tablespoon onion powder

Mix these dry ingredients together and dredge wings in them before frying

Deep fry wings at 375 in a light tasting oil, such as corn or peanut oil. place them in the oil one at a time and fry about 12 minutes (the amount of wings to put in your fryer depends on the size...try not to over-fill). Drain oil from wings well (placing on brown paper, like paperbags is the best at absorbing oil.

Sauce:

3/4 Cup Franks hot sauce
1 stick of butter
Juice of one lemon

Melt butter and hot sauce together, once melted add lemon. Pour over hot wings and serve.
