Monday Brisket

I felt inspired and cooked me some beef brisket.

Here is the brisket after I have I trimmed a good bit of fat from between the flat and the point.

The other side of the meat after I have seasoned it. I do not take to much fat off the top side of the meat:

Here it is after coming of the smoker. Total cook time of about 14 hours.

All in all it turned out very well. I took it to work with me yesterday... I am glad to say I have no leftovers to take back home with me.
I also made a homemade BBQ sauce and Asian inspired coleslaw. Both were also a big hit.
