The volume of this brine will fit nicely into a 1 gallon ziploc bag along with a 3 to 4 lb chicken. (my chicken was spatchcocked) You should have little to no extra brine depending on the size of your yardbird.
1 pt - apple juice
1 pt - water
1/2 cup - maple syrup
1/4 cup - kosher salt
1/4 cup - brown sugar
1 tsp - dried ginger (use fresh if you have it)
1 tsp - black pepper
2 tsp - garlic powder
