Ill kick off with mine.
Im a huge fan of Pork shoulder roasts, this rub is from the Weber's Big Book of Grilling
Rub
1Tbs Paprika
1Tbs Firmly packed brown sugar
1 1/2 tsp chili powder
1 1/2 tsb ground cumin
1 tsb ground black pepper
1tsb kosher salt
1/2 tsb cayenne
1 Boneless pork shoulder roast 4-5 pounds
I cook this using Hickory chunks via cooking specs for most all pork shoulder: 185-195' slow smoked.
Ive made what i guess i would consider a very basic white sauce for it that is just incredible
1/2 cup mayo
1 Tbsp prepared horseradish
1 1/2 Tbsp Shriracha's Hot Sauce
1 tsp kosher salt
1 tsp lemon pepper
smear on buns and serve with (pork) butt!
