I have never opened some packages of whole dried "chile arbol" and ground New Mexico Chile. They have been in these unopened packages for over 2 years. What is the shelf-life of these chiles as I now have need for these items in my upcoming cooks??

The chiles de árbol should be fine. The ground Nm might have diminished flavor but the powder shouldn't be 'bad' in any way.

i worked out in nm in the early 80's and the gal i got my chimayo red from said to keep it in the freezer. so i keep a small amount out for mixing in rubs and the rest in the freezer.
