I have some Guanciale curing in the fridge. Today is the day to take it out and hang it. What I am wondering is do you was the cure off (like when you do bacon and so forth) before hanging it or just leave it as is? I followed the recipe Here and it doesn't say to wash it so I am thinking know, just want to make sure though.....

Thanks! Would it hurt too rinse it (so it wouldn't be so salty)?

I am going to try some Guanciale this month and had a couple questions as this will be my first cure. First, the Babbo recipe does not call for pink salt. Is that anything I need to worry about?

Also, after applying the cure should I vac seal the jowl before refrigerating, or should I just put in a normal zip lock. And do I dump out any liquid that builds up when it is in the fridge?

Use a Ziplock. Drain as you wish but not too soon in the process.

Since guanciale is usually cooked before use, nothing to worry about.
