Charcuterie in WI: Bolzano Artisan Meats

I was reading through Madison Magazine and came across this article on a guy in Milwaukee that does charcuterie. I went to his website and he offers tours for $20 that include a tasting menu. He also occasionally has classes and this month he is having a whole Hog Butchering class.

It's sometimes amazing what exists in your own back yard, and you don't even realize it.

I'll have to check-out his stuff at my local market (my neighborhood grocer carries his products).
