Safe stoker temps...how hot?

What is the hottest you would run your stoker without fear of frying a probe?

Would you feel safe doing a turkey at 325? I think that should be fine, especially if I make sure to remove the probe and/or not leave the lid off too long when I mess with the bird.

Edit - per rock's site, they are good to 450.
