Storing BBQ

Since my wife eats very little BBQ, I find myself with a lot of leftovers. Typically ribs, brisket ,and butt.

Is it worthwhile freezing BBQ for later consumption ?

How long can it keep without freezing ?

I freeze brisket, pork butt, and turkey breast with great success. Use Ziploc freezer bags, squeezing out all the air you can, or vacuum packing using a Foodsaver works well, too. Frozen barbecue will keep well for several months if you get the air out, eliminating most freezer burn.

I've never frozen ribs, so maybe someone else can share their experience.

Without freezing, barbecue is no different than other cooked meats, 3-4 days in the fridge before spoilage begins to set in, according to USDA.

Of particular interest is the first article on refrigeration, which explains the difference between pathogenic bacteria, which causes illness but can't be smelled, tasted, or seen, versus spoilage bacteria which affect the quality, taste, and smell of food, but don't really make you sick. There's a chart at the end of that page that lists safe storage times for a variety of foods.
