Smoked Prawns

Can't remember where this recipe came from but it's a good one.
I did five lbs. of these for a Thanks Giving feast and they disappeared in half an hour.

Smoked Prawns (Or Shrimp)

These are marinated and smoked with the shell on.
Marinate your shrimp or prawns in the refrigerator for no more than 30 min. or the acid will make the meat mushy.

MARINADE

3/4 cup Dark Rum
Juice of four limes.
This will do about 1 lb. of prawns.

ALTERNATE MARINADE

3/4 cup Madeira wine.
Juice of 4 lemons.
This is different but just as good.

SMOKING METHOD

Pre heat your WSM to 220F.
Half a chimney of Briquets works good.
Skewer your prawns so that they don't fall thru the grate.
Toss in a fist sized chunk of Alder, Apple or Oak.
Smoke for 40 - 50 min.
