Sunday Flank

I got to take my new (to me) grill for a test run today, and decided on flank steak. I marinated the steak for a few hours in a simple mixture of:

Olive Oil
Garlic
Cumin
Oregano
Thyme
Orange zest
Orange juice
Lime juice
Salt
Sugar

***This marinade was loosely based on one previously posted by the famous K Kruger....

Got some lump charcoal nice and hot, cooked direct for six minutes a side, and this is what things looked like after 12 minutes:

I sliced it thin on the bias, though I don't have pictures of that as the family was hungry, and not in the mood for daddy to take his sweet time with pics!!! It was a little past where I like it done, so will scale back to 10 minutes total next time. The flavor could be more intense, too, so maybe a longer soak in the marinade is in order.

It's been several years since I have cooked on a Weber kettle (old one died a heroic death in the middle of a competition), and I enjoyed getting to know an old friend again.

Hope y'all enjoyed a nice weekend!

Rich
