What is fresh side? You mean, like, a side of beef or pork? I must be missing somethin' here...
 
Sure, roasted it many ways; braised then roasted it; cured then roasted it, made confit with it then roasted it.

I was flipping through the channels lastnight and caught Emeril live after a commercial break. "Perfect Pork" was the name of the show, and caught my attention. So nothing else was really on so I thought I give it a look see. Well he made this and it really looked good. Thought I'd post it. Asian-Style Pork Belly
