Savory Apple, Blue Cheese and Pecan Tart

12 ounces puff pastry (frozen section)
2 tablespoons unsalted butter
3 apples, peeled and sliced thin
1 tablespoon brown sugar
1 cup Blue Cheese, crumbled
1 cup pecans
--VARIATION:
3 Bosc pears
2 tablespoons butter
1/2 teaspoon sugar
8 thin slices of Prosciutto
1 cup of Blue Cheese, crumbled

Thaw out the puff pastry so you are able to roll it out easily. Roll the sheet very thin. Place on a greased cookie sheet and prick all over with a fork and then place in the freezer for two hours. Preheat the oven to 400 degrees F. Bake the frozen pastry for 5 minutes, prick again and bake for 10 more minutes. Remove and allow to cool. Heat the butter and oil in a large pan and cook the apples approximately 5 minutes. Add the brown sugar and cook for 1 more minute. Remove pan from heat and let apples cool. In another pan, sauté pecans in a tablespoon of butter for about a minute; be careful not to burn. Remove from heat and cool. Lay the apples over the crust and top with Blue Cheese and the pecans and bake at 400 degrees until the cheese is melted, approximately 10-15 minutes.

VARIATION: Follow same directions
Yield: Serves 8-10

That sounds good! Are the pecans whole (halfs)or chopped? What keeps the cheese from flowing out over the cookie sheet? Or does it just hold itself together in amongst the apple slices?
