Raichlen's Brine
1/4 c coarse salt
1/4 c dark brown sugar
20 black peppercorns
1 red chili pepper sliced thinly
2 bay leaves
1 c hot water, 3 c cold water
1 lemon thinly sliced
2 cloves crushed garlic
Dissolve salt and sugar in hot water then add all other ingredients.
