Hey, folks, is there any advantage to cooking a shoulder whole vs. separated into butt and picnic? Does the extra cooking time impart any difference in flavor or tenderness? A heavier bark, maybe? Any advice would be appreciated.

Steve

The picnic has the heavy hide covering and
cooks at different rate than the butt,
I think it's easier to cook seperated.
I like the butt better than the picnic
when there done cooking, better flavor.

Jim, I assume you leave the skin on the picnic, then? I've always removed it.

Steve

I've cooked both ways, unless I can get picnics really cheap I just go with Butts.
Butts are one of the best buys in pork, more bang for the buck.

Jim, thanks for your reply. I agree that butts are a great value. I always buy a few when they're on sale for less than a dollar a pound and restock the freezer. I think I'll do a whole shoulder this weekend just for the challenge of cooking something for 20 hours

Don't like getting sleep??
We are doing around 100 racks of ribs for an event that we can sale them at $1.50 a bone.
Need to put some cash in the bank for the trip to KC in Oct for the Royal.
Let us know how it turns out.
