Reverse Sear on Weber 3 Burner Gas Grill

Hello all,

I've been reading quite a bit about the reverse sear and I just want to make sure I have the procedure right on my gas grill.

Step 1 - Preheat grill with all burners on
Step 2 - Turn top and bottom burners to medium and middle burner off.
Step 3 - Cook steak until it reaches 100 F
Step 4 - Fire up all burners to high to sear

My question is this. Do you actually use a temp probe to do this or do most people just do it on a time based method?

Also, how long do you generally sear for? We usually eat our steak medium-rare and I'm cooking a 1.2 lb T-bone tonight.

Use a thermometer unless you're comfortable temping steaks by feel.

Plan to sear for 2-3 minutes each side.


If the steak is less than 1.5 inches thick I normally just cook it like so:

All burners on high, cook 2 minutes, flip, cook 2 minutes, flip and rotate 1/4 turn, cook 2 minutes, flip and cook 2 more minutes or until done. Great grill marks this way. Each time you flip, flip it to the hot side of the grill.
 
To cook indirect, you'll need the lid closed to keep the heat in.

I like to use higher heat in the front, medium middle, and steaks on the back (turned off). My reasoning is that the heat escapes out the rear, so you'll have no problem cooking indirect. When it's time to sear, the front of the grill is already plenty hot.
