I just popped my chops in my beer brine for a quick smoke later this evening. Here is the recipe;

2 cups Good Brown ale
2 cups tap water
1/4 cup kosher salt
1/4 cup dark brown sugar (packed)
1/4 tsp Louisianan hot sauce
1/8 tsp Cayenne powder
1/4 tsp whole black peppercorns

I plan to coat the chops on both sides with honey before placing them on the smoker

I just placed some nice 2inch thick chops in this brine. I'm going to cook them on the weber onetouch grill this evening. Any thoughts on wood type to throw on top of the coals? I was thinking a few chunks of apple, or maybe even cherry?

Jeff - how did it turn out?

Did you brine for just a few hours?
What time and temp did you use on the WSM?
