Drying Pork Belly With A Fan

I've got some bacon curing in the fridge now for smoking on Sunday. I would like to leave it in the cure until Sunday and dry it with a fan before smoking. I usually dry it in the fridge for a day before smoking but I have been pressed for time and only got it into the cure on Monday. I know that I have read about drying the meat with a fan before smoking but never did it. Would 30 minutes on each side be enough drying time? I guess I could just feel for the pellicle.

I usually use a fan when I am drying my salmon fillets prior to smoking. I find it works well.

I have done it once with pork bellies and it worked very well.

Once curing has fininshed and the bellies rinsed and dried, I set both of them in front of a running fan for about an hour. The fan is then turned off and I allow the bellies to set out at room temperature for the next 24 hours, prior to smoking, to achieve a pellicle. Works for me.
