Smoked Wings

We made some great wings yesterday and I thought I would share how we did it. We got about 15 whole wings and trimmed off the tips leaving the rest of the wing intact. I got a big ziplock bag and put the wings in there. Then I added some Worchestershire sauce, salt, pepper, Pick-a-Peppa sauce and some Hickory salt and into the fridge over night.
After getting the fire hot I put the wings on direct heat for about 3-5 min. on each side then off to indirect heat. I used a mix of hickory, maple, and apple and smoked them for about 3 hours. I added bar b cue sauce in the last 1/2 hour then foiled them for about 45 min. WOW nice red/rusy color before the sauce and a great smokey taste.
