Drew's Italian Chicken Kabobs

I made this up last night and it was stellar. It was a perfect way to break in the new Q300!

Marinade:

1/2 C olive oil
juice of 1/2 lemon
1 tsp balsamic vinegar
4 cloves minced garlic
1 tsp dried basil
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
1/4 tsp cayenne

For the kabobs
2 chicken breasts (cubed into 1 inch pieces)
1 large portabella mushroom (destemmed, cubed)
1 red bell pepper (1 inch cube)
1/2 red onion (I quartered the onion and used two qaurters)
10 sweet cherry tomatoes (whole)
PEPPERONI slices!

I cut up the chicken and got that marinating for a couple hours before cooking. 1/2 hour before cooking I threw all the rest of the ingredients into the marinde as well (except the pepperoni).

I skewered all the pieces and grilled over direct medium heat on bamboo skewers until done. Do not overcoook the chicken! The pepperoni slices get super crispy and tasty. My wife absolutely loved these. I thought they were great. They were a little different than your normal kabobs. Give em a shot!
