V Virginia New member Nov 4, 2008 #1 This weekend, I had a great smoke session with pheasant: wrap each bird with hickory bacon, then wrap THAT in cheesecloth. Smoke at 250 for about 2-3; wrap in foil for 45 minutes. Enjoy!
