Asian BBQ Chicken


1/4 Cup packed brown sugar
1/4 Cup Soy Sauce
2 T. lime juice (about 1 lime)
1/4 t. cayenne
1/4 t. curry powder
3-4 garlic cloves, minced
1 t. grated fresh ginger
8 boneless, skinless chicken thighs

Combine everything except chicken in small bowl. Whisk to dissolve brown sugar. Place chicken in marinade and let marinade at least 4 hours or overnight.

Tip: make 1 1/2 times the marinade and reserve some before adding the chicken and then use it to baste during the last few minutes of grilling or just brush on after for extra flavor.

I'm hoping someone will try this one and let us know what they think. I know there are so many good recipes on this site you just can't try them all! Believe me I know. This was a big hit at our house though.
 
I had every intention of cooking something like this for the weekend, but my kid's performance schedule will not allow me to. Was going to do whole on the rotisserie.
