In need of a hushpuppie recipe

I know, totaly unrelated to the recipes we usually discuss around here, but I know there are alot of good cooks here.

I am looking for a good recipe that will be similar to what Red Lobster or Long John Silvers would have. All the ones I have tried do not have the correct proportions of flour to corn meal and come out to cake like. And all corn meal comes out to heavy.

Would prefer to not have to go to a commercial package.

So let's hear what you think.
 
Haven't tried it, but this is from the Homesick Texan:

Hush puppies

Hush puppies
Ingredients:
3/4 cup of yellow corn meal
1/3 cup of all-purpose flour
1/2 teaspoon of baking powder
1/4 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of milk or buttermilk
1 egg
2 teaspoons of bacon drippings (optional)
1 jalapeno pepper, stems and seeds removed, finely diced
1/3 cup of diced onions
Oil for frying

Method:
Mix together all ingredients.
In batches, cook tablespoon-sized balls of dough in hot oil, until crisp and golden brown (about two minutes).
Makes about 20 hush puppies.
