Then covered, and left outside in the 40F weather for 2 hours.

A very happy Valentine's Day was had by all, hope you all had one too!!
 
All I can say is... WOW. That is some killer looking steak. My mouth is watering. Literally.

Bob, those are some fantastic looking steaks!

Thanks for sharing the alternative names for this cut of steak. We have a local restaurant that serves a club steak and I always wondered what it was. Their club steak sometimes looks like a tri-tip by the grain, but I have seen them look like yours too.
