Great Chicken Salad

My wife and I love this recipe that I made to use leftover smoked poultry. It is easy and delicious.

Chicken Salad

4 cups chopped cooked chicken (smoked is great)
1 cup chopped celery
1 cup chopped roasted walnuts
½ cup chopped fresh pineapple
¾ cup mayonnaise
¼ cup whipping cream
¼ cup sweet pickle relish
2 tbs. minced shallot
1 tbs. lemon juice
½ tsp. salt
freshly ground white pepper to taste

Mix and toss all ingredients together. Cover and chill.

Comments / suggestions:
1. Serve in fresh “pineapple boats”
2. You can add a bit of chopped fresh tarragon if you like it.
