I am trying to put together a list of essential fresh spices for the beginning BBQ'er.

Any ideas?

List:
Allspice
Celery Seed
Chipotle Pepper Powder
Cinnamon
Coriander
Cumin
Garlic
Mustard
Onion
Paprika, Hungarian Sweet
Paprika, Spanish Smoked
Pepper, Black
Pepper, Cayenne
Rosemary
Sage
Salt, Course Sea
Salt, Table
Thyme

Any pros/cons to either?

I am trying to put together a shopping list for Penzey's, and just want a good list from which to order.

I have (like most of us I am sure) a gaggle of spices at the moment. Some are new, but some VERY old. Sadly up to 10+ years for some of them.

Penzeys is not for the novice spice finder though, as I have found. It seems they have so many choices, it becomes hard to make a choice!

So, if anyone has any favorites, let me in on it.

My preference is for granulated onion/garlic. I have used mustard powder but the pros seem to agree that a fresh roasting of seeds is much better-try that. I would order the spices you like and those that are in the recipes you want to try.
 
I ended up just picking a few things that looked good. Here is what I ended up getting.

Aleppo Pepper
Ancho Chili Pepper

Medium Hot Chili Powder
Cayenne Red Pepper Powder
Ceylon Cinnamon Ground
Madagascar Cloves Whole

Smoked Spanish Paprika
Hungarian Half-Sharp Paprika
Thyme French
 
Dave, nice list. I use the Ancho powder instead of paprika in my rubs . Gives it a whole different flavor. You will really like the chipotle pepper. Gives a nice smokey flavor.
