Pre-Peeled Garlic - Chemical/Gassy Odor?

I just bought a 3-pound bag of peeled garlic for the first time (what was I thinking?) and began chopping a little of it to store in the freezer (thanks, Kevin for that idea!).

I rinsed and dried it before chopping and it still has a slight chemical/gassy smell after chopping.

Will this dissipate? How will this affect the results when used in cooked and uncooked dishes?

It will dissipate. You should lose all of it, pretty much, during cooking. Fresh, whatever residual might be there will likely be masked by other ingredients. You might notice a bit more 'tartness' in aroma or flavor, but this can be compensated for.
 
Thanks, Kevin. I'm glad I haven't wasted the $5.99. Guess I'll open all the windows and finish chopping and bagging the garlic today.
