Here's a different potato salad from Southern Living that's very tasty. I've also calculated the Weight Watchers points for it, so if you have folks coming in for the holidays that are following WW, you can offer this information to them. Potato salad with real bacon AND bacon grease that's LEGAL - they'll love you for it!

Potato salad with spinach and warm bacon vinaigrette

3 lb new potatoes
6 slices bacon
1/4 cup extra virgin olive oil
1/2 medium red onion -- chopped (about 1/2 cup)
2 Tbs brown mustard -- spicy
3 Tbs cider vinegar
1 tsp salt
1 tsp sugar
1/4 cup fresh basil leaves -- chopped
1/4 cup fresh Italian parsley -- chopped
2 cups fresh baby spinach leaves -- (optional)

Cook potatoes in boiling salted water to cover 20 minutes or until tender. Cut into quarters and set aside.

Cook bacon in a large skillet over medium high heat until crisp. remove bacon, and drain on paper towels, reserving drippings in skillet. Crumble bacon, and set aside. Add olive oil to bacon drippings.

Saute onion in hot oil and drippings over medium-high heat 8 minutes or until tender. Remove from heat, and whisk in mustard, vinegar, salt, sugar, fresh basil leaves, and fresh parsley.

Pour warm onion mixture over cooked potatoes, tossing to coat. Stir in spinach, if desired, and top evenly with bacon. Serve immediately.

Note - if you drop the EVOO to 2 Tbs and the bacon to 5 slices instead of 6, nutrition goes to 200 Calories; 6g Fat (25.5% calories from fat); 5g Protein; 33g Carbohydrate; 3g Dietary Fiber; 3mg Cholesterol; 398mg Sodium. Exchanges: 2 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1 Fat; 0 Other Carbohydrates. (Slightly under 4 WW points per serving.)
