First Real Sausage

Ok, so I got my grinder last weekend. I finished my first read through of "Charcuterie". I also read "SAUSAGE MAKING How-to Techniques for Making and Enjoying 100 Sausages at Home", and my hog casings arrived today. So this weekend I am going to make my first sausage. I am thinking a bratwurst for the first go around. Nothing to adeventurous as my wife and kids already eat them from a local deli.

Just can't decide which recipe to use: the one from Wedliny Domowe or the one of the ones from "Charcuterie".

Anyone have any suggestions that I first timer might find helpful?
 
Imo, there are things I don't like about both. I don't care for the caraway in the WD recipe (it's Nurmburg style - not a fan) nor the lack of cream and/or milk.

I don't care for the soy protein in Charcuterie's.

You could do one or the other and see what you think, or combine the best of each recipe and see what you think of that. Sort of like this.
