Chicken roulade

Here's a quick roulade recipe I did this past weekend.

Pounded chicken breasts
Sauteed shallot, crimini mushrooms, and red bell pepper added sage at this point.
Toasted pine nuts
Goat cheese
Dice homemade bacon
Rubbed sage
S & P

Spread cheese on chicken, then added sauteed veggies and pine nuts. Rolled up and toothpicked to hold. Quickly browned roulades in pan to add light browning. Deglazed pan with white wine and added a little butter and flour to form a roux. Then added chicken stock, S & P and a little cream. Finished the roulades in the oven and sauced before serving with salad of spinach and arugula.

Looks good to me too Paul. I make these fairly often. Nice to be able to see what others mix in too!
