Sable Fish - Black Cod

Someone has asked me to smoke a large amount of black cod (100 plus LB'S). I have cooked with the fish before but never smoked. Just wondering if anyone else has. I'm thinking of brining for about an hour, air drying and then smoking with cherry or maple. Thoughts?

Haven't smoked sable but used to sell the hell out of it in Miami (flown in from your neck of the woods).

I'd do the same as you're proposing though, flavoring the brine a bit, lightly rubbing.
