Chocolate Chip Cheesecake

Make this a day or two ahead and keep it in the 'fridge to set up.

Chocolate Chip Cheesecake

Crust
2 cups graham cracker crumbs
¼ cup sugar
6 tablespoons melted butter
Pam Spray

Pre Heat oven to 325 degrees
Combine crumbs, sugar and butter
Coat 9” springform pan with Pam Spray
Press crust mixture in bottom and up sides of pan
Bake for 7 minutes

Filling
5 8oz packages cream cheese at room temp
1 2/3 cups sugar
5 eggs room temp
1 tablespoon vanilla extract
1 cup Bailey’s Irish Crème - optional
1 bag Chocolate chips

In electric mixer beat cream cheese until smooth
Gradually add sugar
Beat in eggs one at a time
Blend in Vanilla and Bailey’s

Sprinkle ½ chocolate chips on crust
Spoon in filling
Sprinkle remaining chocolate chips on top of filling
Bake at 325 1 hour 20 minutes until springy in middle and golden brown
Turn off oven crack open door and allow to completely cool
Refrigerate ( I think it’s best to refrigerate overnight but that’s just my opinion )
