Turkey Au Jus Recipe ?

Hi All,

I'm looking for a recipe for a thin, flavourful dipping sauce for turkey. I'd compare it to an au jus. I want to stay away from anything creamy or requiring a roux.

Can anyone help?

I've never tried it myself, but just an idea- you can use egg yolk as an emulsifier, and add butter and reduced filtered turkey broth. It will probably turn out as some sort of hollandaise or bernaise, but with turkey taste.

Hm- i think I will need to try this out
