I really like Forschner/Victorinox knives. I have this one it is a great slicer that I got for brisket. Very easy to keep sharp and easy to use.

I purchased this knife. I know it is pricey but the knife is incredible. It gets ridiculously sharp and retains an edge for a very long time. At first I thought it was way too much to spend on a knife but it is so nice to work with and is a work of art as well.

I also consider the food industry equipment. I have a couple of Update International knives that have served me well. One is a slicer like at the link below and the other is a similar bread knife.

I picked up this 12" Victorinox chef's knife.

Just got this a few days ago. I've only used it once, to slice some bacon I smoked. But it worked beautifully.
