Lots of chiles to use up. Any ideas.

I have just started taking the last of our chiles off their plants as the growing season seems to be coming to an end here. We are growing Jalapeno Summer Heat and an italian variety. The one we have most of is the Jalapeno Summer Heat. We have used them for a number of things but are still going to have lots left. Any ideas. I have heard of a chile jam, but have never made it. Anyone got a great recipe. Any other great recipes for using up our surplus would be appreciated.
 
Mike one of the best things I have done on the smoker is add a large assortment of chiles to the wsm after a cook-let dry overnight.
I do miss those smoked chiles when I run out.
 
I usually grow Serrano chiles instead of Jalapenos but when I have more than I can use I like to make a tabasco style sauce by putting them in the blender with some salt and garlicthen cooking down with a little apple cider vinegar and water and strain through a cheese cloth or something very fine so that that all you are left with is the liquid.
