I own a firebox smoker and have tried doing fish before, i.e. dolphin, mullet etc. I worked out well. I had to use very low temps... around 180. But it came out very well.

Can you do seafood on the WSM? Will it maintain low temps?
 
You can by limiting the amount
of fuel you use. By using a cooler burning charcoal will help also.
