Masa Harina Storage

I usually vacuum my bag of masa harina in a FoodSaver bag. I store all my whole-grain cornmeal, grits, and other whole-grain meals and flours in plastic bags in the freezer.

Since the corn for masa harina has been soaked in the slaked lime, can't it be FoodSavered as above and stored at cool room temperature?

How long?

Thanks, Paul. I've had mine sitting in our cool storage area for about 6 months and it still smelled good but wanted to check to be sure.
